what's cookin, good lookin? spaghetti squash carbonara!

this was a recipe i got from a friend and doctored it up & changed the directions a bit. i was doing a clean eating challenge the other week and this was one of the recipes on the list. it turned out fantastic so i just had to share! sorry for the lack of progress photos, chris started the cooking for me because i was running late from a wedding i was coordinating.
ok so here we go!
spaghetti squash carbonara

ingredients:
1 spaghetti squash
5 strips of nitrate and sugar free bacon
garlic (I like a lot of garlic so this is up to what you think will taste good. I used about 3 large cloves)
1 large egg
large pinch of fresh basil (I cut up about 5 leaves from our basil plant)
salt and pepper
1 clean glass container for bacon grease
1 bottle of wine (variety of your choice)
Here is what I doctored it up with:
½ red onion, chopped
½ green pepper, chopped
red pepper flakes
crumbled feta
Directions:
Pour yourself a glass of wine
Preheat oven to 375 degrees
Cook spaghetti squash by cutting it open. Scrape out the seeds and gunk. Bake for 30 mins or until squash comes out easily (took ours about 28 mins) Also, read the directions that will come on your squash, it may be different than i am directing. If you are in a hurry, you can also microwave to save time
Cook the bacon in a pan following package directions and set aside
Let the grease cool a bit and pour into glass container (you will be using it later so do not throw it out, this is why it is important to get lean bacon)
Sautee garlic and onion. Wait a minute or two, and then add the green pepper. Sautee together until desired level of crunch is reached for the green pepps. Remove from heat
About this time the spaghetti squash should be done. Carefully remove from oven and begin to scrape the inside so that they become “noodle” like. Caution: these have been in the oven for a bit so use common sense to prevent any burns
Scrape out into bowl but do not discard rind
Drizzle bacon juice on so that it coats the squash noodles and mix around
Crack egg on top of squash and quickly scramble until the egg is cooked. If you do it quick enough, it should be about 30 seconds
When the egg is cooked, add the rest of your fixins along with the basil and mix.
Once you are happy with the ratio, scoop mixture back into the squash boats and crumble up the back on top. Top of with a bit of cheese and pepper flakes and you are good to go!
Refill your glass of wine
