what's cookin, good lookin? caprese chicken that's what!

one of my favorite hobbies is cooking. i love it. i love trying new recipes and i love experimenting with different ingredients. thankfully my husband is eager to try just about anything and everything that i put on our table so it works out quite well! i find most of my recipes on pinterest, duh, as just about everyone else these days does! i have really enjoyed trying (and sometimes failing) new recipes.

we got a basil plant from trader joes about two months ago and i have been trying to add it to as many recipes as i can. one of my favorite things i tried was a caprese chicken dish! it is so good (of course the more cheese you add to it the better it tastes).

ok so here we go!

caprese chicken

serves:2

cook time:35 minutes

prep time: this is always a lie. Never trust when people tell you how long it took them to prepare a dish.

ingredients:

2 boneless chicken breasts (thawed)

Mozzerella (you can use as much as your heart desires. i used the tomato basil from trader joes)

1 large tomato

Bunch of basil

¼ cup grated parm (… or more. why skimp? Treat yo’ self)

Some Italian seasoning (about a tablespoon)

1 bottle of wine (variety your choice)

Directions:

  1. Pour yourself a glass of wine

  2. Preheat oven to 400 degrees

  3. Grease 9x12 casserole dish

  4. Pound the chicken breast until they are easily folded in half and you can set the goodies inside

  5. Lay breast in pan and sprinkle with seasonings

  6. Layer a tomato slice or two (depending on size of slice and breast) with basil and a slice (or two) of the mozz cheese

  1. Fold the chicken in half making sure all the goodies are inside and tie with some string just to make sure it stays secure.

  2. Sprinkle with any seasoning that may be left and pop them in the oven for about 30-40 minutes or until the chicken is done (no longer pink)

  3. Pull the pan out and turn oven to broil

  4. At this point, it should be pretty set on its form so remove the string carefully.

  5. Place remaining cheese on top of chicken and pop back into the oven until it is browned and bubbly (was about 6 mins or so for me because I didn’t wait for it to finish reaching the broil temp) The cheese spreads........don't judge

  1. Pull pan out of the oven and carefully set on plate

  2. Wait for the chicken to cool and refill your wine glass

  3. Enjoy!
